Grilled lamb steak with rosemary

Background
This grilled lamb steak is perfect for midweek supper or a weekend BBQ. Serve it with boiled potatoes and green salad or steamed veggies. Or, when cooked and rested, slice itΒ andΒ tuck it into grilled pita or flatbread with some salad & dressing.
Ingredients
- 4 lamb steaks (boneless)
- 3 Tbsp rosemary (chopped)
- 3 Tbsp mint leaves (chopped)
- 4 Tbsp balsamic vinegar
- 2 Tbsp olive oil
- 2 cloves of garlic
Instructions
- Score the flesh using a sharp knife, but not too deeply.
- Mix the other ingredients, pour over the meat and massage well. Marinate in the refrigerator for a couple of hours, preferably overnight.
- Heat a grill, barbecue or griddle pan. Remove the steak from the marinade, season to taste.
- Grill or barbecue on both sides for 2-5 minutes, depending on how well done you like it.
- Remove steak from the pan, rest for 5 minutes before serving.
