Background
These Harissa chicken skewers are perfect for barbecues, parties and laid-back suppers. The marinating can be done in advance, so you can concentrate on your guests! Serve with a salad, cous-cous or flatbread.
Ingredients
- 300g chicken breast, diced
- Grated zest and juice of 1 lemon
- 2 tsp harissa paste
- Β½ tsp ground cumin
- Β½ tsp ground coriander
- Pinch of cinnamon
- 1 handful tomatoes
- 1 red bell pepper
Instructions
- Mix the harissa paste, spices, lemon juice and zests in a mixing ball. Add the chicken pieces and massage them, until well covered.
- Cover the bowl and rest in the fridge for minimum 30 minutes.
- Meanwhile soak some wooden skewers in warm if youβre using wooden ones).
- Take the chicken out of the fridge. Season with salt and pepper.
- Heat your BBQ or grill.
- Cut the pepper into bite-sized chunks.
- Thread the chicken and veggies onto the skewers.
- Cook the skewers over medium flame, until lightly charred and the chicken is cooked through.
