Healthy breakfast oat pancakes

Background
These healthy breakfast oat pancakes are full of fibre, protein and essential oils – the perfect food to start your day. For a vegan version use one flax egg. Serve them with maple or date syrup and/or plant based yoghurt .
Ingredients
- 1 cup rolled oats
- 1 egg
- 1 Tbsp flax seeds
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 handful walnuts or almonds
- 1 cup almond or soya milk (approx.)
- Optional: few dates, prunes or dried figs
Instructions
- Put all ingredients in a blender. Add a couple of dried fruits, if you like.
- Whiz until you get a thick, textured batter.
- Lightly oil a pancake pan then add dollops of the batter. Using the spoon, make them circular shape.
- After a couple of minutes flip them over and cook them on the other side for a minute or so until golden.
- Transfer them to a plate and make more batches from the remaining batter.
- Serve at room temperature.
