Background

These healthy breakfast oat pancakes are full of fibre, protein and essential oils – the perfect food to start your day. For a vegan version use one flax egg. Serve them with maple or date syrup and/or plant based yoghurt .

Ingredients

1 cup rolled oats
1 egg
1 Tbsp flax seeds
1 tsp baking powder
1 tsp vanilla extract
1 handful walnuts or almonds
1 cup almond or soya milk (approx.)
Optional: few dates, prunes or dried figs

Instructions

Put all ingredients in a blender. Add a couple of dried fruits, if you like.
Whiz until you get a thick, textured batter.
Lightly oil a pancake pan then add dollops of the batter. Using the spoon, make them circular shape.
After a couple of minutes flip them over and cook them on the other side for a minute or so until golden.
Transfer them to a plate and make more batches from the remaining batter.
Serve at room temperature.
