Background
This gluten-free cheesecake is also low in sugar, carbs and fat so perfect for those who are on a low-carb or healthy diet. You can make it with most berries -Β I used blackberries.
Ingredients
- 250g creamy cottage cheese or low-fat cream cheese
- 2/3 cup Greek yogurt
- 1 teaspoon cornstarch (cornflour)
- ΒΌ tsp salt
- 2 Tbsp Stevia
- 1 egg, beaten
- 1 egg white
- Β½ lemon, zested and juiced
- 1 Β½ cups of berries
Instructions
- Preheat the oven to 180Β°C. Grease and line the base of a round cake tin.
- Mix the cream cheese and yogurt until creamy a fluffy. Add the cornstarch, salt and Stevia, then combine. Gently stir in the egg and extra egg white, then add the lemon zest, juice and berries.
- Tip the mixture into cake tin, spreading it out evenly.
- Bake for 30 minutes, then allow to cool in the oven (with the door slightly open) for 20 minutes or so.
- You can serve it lukewarm or let it cool completely, then refrigerate till serving.
