Background
This Healthy crunchy slaw is ready in just 10 minutes β perfect side dish for frilled/barbequed steak or makes an excellent filling in kebabs, sandwiches and burgers. I added some chilli to give it a kick, but itβs not essential. I used skyr, which is a super healthy Nordic cultured yogurt, similar to Greek yogurt.
Ingredients
- 1 carrot
- 1 cup shredded white cabbage
- 1 cup shredded celeriac
- 1 bunch spring onions
- 1 handful of radish
- Β½ red chilli (optional)
- 3-4 Tbsp Skyr or Greek yoghurt
- 1 Tbsp olive oil
- 1.5 tsp cider vinegar
- 1.5 tsp lemon juice
- 1 Tbsp toasted sesame seeds
- Salt & pepper
Instructions
- Thinly slice the radish then cut them into matchsticks.
- Shred the celeriac and cabbage, then thinly slice the spring onions (green parts too).
- Mix all these in a large bowl, then add enough yogurt to combine.
- Add the oil, vinegar & lemon juice. Season with salt and pepper, sprinkle half of the sesame seed.
- Let it rest for 10 minutes and taste. Adjust the acidity, by adding more lemon juice or cider vinegar if needed.
