Healthy vegan banana bread
Background
This is the best healthy vegan banana bread I’ve ever made! I came up with the recipe in order to use up some leftover ingredients in my pantry. It’s gluten-free, egg-free, dairy-free, sugar-free and has very little oil. Yet it’s really moist and yummy! Why? Because the sweetness comes from the bananas & mixed dried fruits (I used chopped apricots, cranberries, cherries and sultanas), the bananas, seeds and ground almond provide fat; the oats provide fibre; the oat cream provides moisture and the ground flax seeds act as the binding agent. The resting is important so don’t skip it! Serve it for breakfast or with your morning coffee and afternoon tea.
Ingredients
- 2 ripe bananas
- 1 tsp ground cinnamon
- 1 tsp mixed spice
- ½ tsp vanilla paste
- 1 Tbsp ground flaxseed or chia seeds
- 1 cup soya or oat cream
- 2 Tbsp of vegetable oil
- 1 cup gluten-free oats
- 1 cup brown rice flour
- 2 tsp baking powder
- ½ cup ground almond
- ½ cup mixed dried fruits and seeds
Instructions
- Mash the bananas with the cinnamon, mixed spice and vanilla paste. Add the ground flaxseed and oat cream. Set aside for 5 minutes then add the oats and rest for 10 minutes.
- Preheat the oven to 160°C. Line a loaf tin with parchment paper or paper basket.
- Add the rice flour and ground almonds to the banana mixture and combine well. Finally, fold in the mixed died fruits and seeds.
- Tip the batter into the tin, spreading it out evenly.
- Put the tin in the middle of the oven and bake for approx. 60 minutes until golden and an inserted skewer comes out clean.
- Let it cool in the tin for 5 minutes, then transfer it to a cooling rack.
- When it’s completely cool, slice it and serve.
