Herby onion chutney
Background
Onion chutney or marmalade is a must-have condiment during the winter festivities as it's very useful and really versatile: it can beย eaten with cold meats, cheeses or served with nibbles, snacks, burgers, sandwiches and so on. This simple boozy and herby onion chutney also makes a wonderful Christmas gift for friends and family members.
Ingredients
- 50g butter or dairy-free margarine
- 2 Tbsp olive oil
- 2 kg onion
- 2 sprigs of thyme
- 1 bay leaf
- 1 tsp salt
- 250g granulated sugar
- 250 ml apple cider vinegar
- 100 ml red wine
Instructions
- Peel the onions, cut in half, then slice thinly.
- Heat the butter and oil in a heavy-based pan. When foaming, add the onion, salt, thyme, bay leaves.
- Slowly cook on low heat until soft, while occasionally stirring. This will take about 30 minutes.
- Discard the thyme sprigs and the bay leaf.
- Turn up the heat slightly, add the sugar and cook for another 30-45 minutes. When you get a thick, rusty coloured jam, add the wine and the vinegar. Season to taste.
- Cook for a further 20-30 minutes, until it thickens.
- Pour into sterilized jars and seal. Keep in a cool place, and after opening in the fridge.
