Honey roasted baby carrots

Background
Baby carrots are sweet and tender, baking them creates a perfect side dish for a roast meat. This dish takes just 30 minutes to cook, so use the lower shelf in the oven, whilst youβre roasting your main course and adjust the timing! It goes particularly well with poultry and lamb.
Ingredients
- 250g baby carrots
- 2 tsp olive oil
- 1 knob of butter (or dairy-free spread),
- 1 Tbsp honey
- 1.5 Tbsp cider vinegar
Instructions
- Put the carrots in a baking tray. Drizzle with olive oil, then crumble the butter all over and season with salt and pepper.
- Bake, at 180°C, for 25 minutes or until tender.
- Remove the tray from the oven, drizzle the carrots with the honey and cider vinegar, then cook for a further 10 minutes until sticky and golden.
- Serve warm.
