Indian cucumber and drumstick curry

Background
The Indian yellow cucumber is a vegetable which is very healthy. It can be cooked in many ways. This recipe is very easy to make and adds nice flavours to the bland taste of cucumber. I love cucumber and use it frequently.
Ingredients
- 1 Indian yellow cucumber (Peeled, de-seeded and cubed)
- 1 Onion, finely chopped
- 2 tsp Ginger, grated
- 2 tsp Garlic, grated
- 3 Tomatoes, chopped
- ½ Drumstick, cut into pieces
- 1 tsp Cumin seeds
- 1 tsp Chilli powder
- 1 tsp Coriander powder
- Salt as required
- 1 Tbsp Oil
- A sprig of curry leaves
- A spring coriander leaves, chopped
Instructions
- Heat oil in a deep bottomed vessel and add cumin seeds and let them splutter.
- Add onion, curry leaves, ginger and garlic and fry until the onion is brown.
- Add the chopped tomatoes, cucumber and drumsticks and mix.
- Add chilli powder, coriander powder, salt and ½ cup water and cook under lid until they are soft.
- Garnish with coriander leaves.
