Ingredients: 1 Indian yellow cucumber (Peeled, de-seeded and cubed); 1 Onion, finely chopped; 2 tsp Ginger, grated; 2 tsp Garlic, grated; 3 Tomatoes, chopped; ½ Drumstick, cut into pieces; 1 tsp Cumin seeds; 1 tsp Chilli powder; 1 tsp Coriander powder; Salt as required; 1 Tbsp Oil; A sprig of curry leaves; A spring coriander leaves, chopped

Background

The Indian yellow cucumber is a vegetable which is very healthy. It can be cooked in many ways. This recipe is very easy to make and adds nice flavours to the bland taste of cucumber. I love cucumber and use it frequently.

Ingredients

1 Indian yellow cucumber (Peeled, de-seeded and cubed)
1 Onion, finely chopped
2 tsp Ginger, grated
2 tsp Garlic, grated
3 Tomatoes, chopped
½ Drumstick, cut into pieces
1 tsp Cumin seeds
1 tsp Chilli powder
1 tsp Coriander powder
Salt as required
1 Tbsp Oil
A sprig of curry leaves
A spring coriander leaves, chopped

Instructions

Heat oil in a deep bottomed vessel and add cumin seeds and let them splutter.
Add onion, curry leaves, ginger and garlic and fry until the onion is brown.
Add the chopped tomatoes, cucumber and drumsticks and mix.
Add chilli powder, coriander powder, salt and ½ cup water and cook under lid until they are soft.
Garnish with coriander leaves.
