Indian spiced pork ribs

Background
These Indian spiced pork ribs are perfect for summer BBQ parties. The ribs are precooked and marinated so the grilling only takes a few minutes. Serve it with naan bread, rice, mango chutney and raita.
Ingredients
- For the ribs:
- 700g pork ribs
- 1 star anise
- 1 bay leaf
- 1 garlic
- 1 piece of turmeric root
- 1 piece of ginger
- 5 cloves
- For the paste:
- 1 tsp coriander seeds, toasted
- 1 tsp cumin seeds, toasted
- 1 garlic clove, chopped
- 1 cm piece of ginger, chopped
- Β½ red chilli
- Β½ tsp cinnamon
- Β½ tsp garam masala
- Β½ tsp paprika
- 1 lime
- 1 tomato chopped
- 1 tsp dark sugar
- 1 tsp oil
- Few black peppercorns
- To serve:
- 1 handful coriander leaves
Instructions
- Put the ribs and other ingredients a large pot of water, bring to the boil and cook for 30 minutes. Alternatively, use a pressure cooker - cook the ribs under pressure for 10 minutes.
- Transfer the pork ribs to a plate, let them cool then wipe them with a kitchen towel.
- Put all ingredients for the paste in a food processor and whiz until you get a coarse paste.
- Rub the ribs with this paste, then marinate them for at least 2 hours, or even overnight.
- Just before grilling season with salt.
- Heat the BBQ, grill or griddle pan, then cook the ribs for 5-8 minutes until slightly charred.
- Serve warm or at room temperature.
