Indian spiced spinach fry

Background
This Indian spiced spinach fry can be served as a side dish in Indian menu, or you can mix it with yoghurt and youβll getΒ a yummy raita. Furthermore, you c n use it as filing in flatbread dough or samosas, pancakes, scones etc.
Ingredients
- 1 Tbsp oil
- 2 garlic cloves, sliced
- 2 cm ginger, chopped
- Β½tsp cumin seeds
- Β½ tsp coriander seeds
- 2 pinches of dried chilli
- Β½ tsp paprika
- ΒΌ tsp turmeric
- 200g spinach
- Β½ Lemon, juiced
Instructions
- Heat the oil in a large frying pan over a medium heat, then fry the ginger, garlic, chilli flakes and cumin seeds for a minute.
- Add the paprika & turmeric, stir for a few seconds.
- Add the spinach and lemon juice, put a lid on and cook for about 5 minutes until the spinach has wilted.
- Season with salt and pepper and serve.
