Background

This Indian spiced spinach fry can be served as a side dish in Indian menu, or you can mix it with yoghurt and you’ll get a yummy raita. Furthermore, you c n use it as filing in flatbread dough or samosas, pancakes, scones etc.

Ingredients

1 Tbsp oil
2 garlic cloves, sliced
2 cm ginger, chopped
½tsp cumin seeds
½ tsp coriander seeds
2 pinches of dried chilli
½ tsp paprika
¼ tsp turmeric
200g spinach
½ Lemon, juiced

Instructions

Heat the oil in a large frying pan over a medium heat, then fry the ginger, garlic, chilli flakes and cumin seeds for a minute.
Add the paprika & turmeric, stir for a few seconds.
Add the spinach and lemon juice, put a lid on and cook for about 5 minutes until the spinach has wilted.
Season with salt and pepper and serve.
