Indian style fried potatoes with eggs

Background
Potatoes and eggs are a great combination. This recipe is very easy to make and can be a side dish. It is a family favourite - we make it when we are pressed for time. It can be put togetherΒ quickly and easily.
Ingredients
- 1 Medium potato (peeled and cubed)
- 2 Eggs (beaten)
- 1 Onion (chopped)
- 1 Garlic pod (finely chopped)
- ½ tsp Cumin seeds
- Salt as required
- 1 Tbsp Oil
- 1 tsp Turmeric
- 1 tsp Red chilli powder (or according to taste)
Instructions
- Heat oil in a pan and add the cumin seeds and let them splutter.
- Add the potato and the garlic to it. Let the potato cook half way through.
- Add the onions, salt and turmeric and cook until the potatoes are soft.
- Add the beaten eggs to it and mix until the eggs are cooked.
- Add the red chilli powder and mix for a minute and switch off the flame.
- Serve hot as a side dish.
