Background

Potatoes and eggs are a great combination. This recipe is very easy to make and can be a side dish. It is a family favourite - we make it when we are pressed for time. It can be put together quickly and easily.

Ingredients

1 Medium potato (peeled and cubed)
2 Eggs (beaten)
1 Onion (chopped)
1 Garlic pod (finely chopped)
½ tsp Cumin seeds
Salt as required
1 Tbsp Oil
1 tsp Turmeric
1 tsp Red chilli powder (or according to taste)

Instructions

Heat oil in a pan and add the cumin seeds and let them splutter.
Add the potato and the garlic to it. Let the potato cook half way through.
Add the onions, salt and turmeric and cook until the potatoes are soft.
Add the beaten eggs to it and mix until the eggs are cooked.
Add the red chilli powder and mix for a minute and switch off the flame.
Serve hot as a side dish.
