Italian-style stuffed mushroom

Background
This Italian-style stuffed mushroom is perfect for a lazy weekend lunch, served with a green salad. Alternatively it’s a perfect side dish for a steak. It’s ready within just 15 minutes - and it’s very filling too!
Ingredients
- 2 large flat mushrooms
- 5-6 sundried tomatoes from jar
- 1 handful of basil or parsley leaves
- 1 Tbsp pine nuts
- 50g Gorgonzola (approx)
Instructions
- Preheat the oven to 180°C.
- Cut off the stems of the mushrooms and chop these up roughly. Put the chopped mushroom bits, the pine nuts, basil leaves and sundried tomatoes in a small food processor. Add a few drops of the oil from the jar and whiz until you get a textured paste.
- Spread the paste onto the mushrooms then crumble the cheese on top.
- Bake for about 10-15 minutes.
- Serve hot.
