Lentil and Coriander Curry
Background
A simple meal in India usually would include Lentil as a main dish. It not only is a nutritious one, but also a very delicious and wholesome meal. Across India Lentil is a must-have in any household. This recipe is my husband’s favorite and will not complain if lentils are cooked in this fashion. It is very easy to cook and is enjoyed steaming hot with rice or bread/roti.
Ingredients
- 1 Cup Red Lentils (boiled to a fine mash)
- 1 Medium Onions
- 2 Green Chillies sliced
- 2 Red Chilli
- ½ tsp Mustard Seeds
- ½ tsp Cumin Seeds
- ½ tsp Turmeric powder
- 4-5 Curry leaves
- 1 tsp Red Chilli Powder
- 1 Tbsp Oil
- Salt to taste
- 4-5 Stems of Coriander leaves to garnish
Instructions
- Wash the lentils well and add 2 cups of water to 1 cup of lentil and ½ tsp Turmeric powder and pressure cook for 6-8 whistles or till they are mashed well.
- Fry the chopped onions to golden brown, add the above cooked lentil and add 1 cup water and bring it to a boil.
- In a small pan or vessel heat 1 table spoon of oil and add ½ tsp of Mustard seeds and Red chilli. When the mustard seeds crackle, add ½ tsp Cumin seeds and green chilli and allow them to fry for 30 seconds. Add this to the lentils.
- Add Coriander leaves to garnish and serve it with rice or bread/roti.
