Lentil and green been salad

Background
Here'sΒ super-easy and rather tasty side dish that goes particularly well with barbecued, fried or roast pork. It's suitable for an everyday meal or relaxed dinner parties.
Ingredients
- 100g lentils
- 100g green beans
- 1 Tbsp olive oil
- juice of half a lemon
- 1 Tbsp red wine vinegar
- ΒΌ tsp unrefined sugar
- 1 handful parsley, chopped
Instructions
- Rinse the lentils then put them into cold water in a saucepan. Bring to the boil and simmer until tender - about 15-20 minutes.
- Meanwhile mix the dressing: the lemon juice, oil, vinegar and sugar.
- Blanch the green beans in another saucepan - or steam over the cooking lentils
- Drain the lentils & green beans then arrange them in a serving dish and toss with the dressing.
- Season to taste and sprinkle with the chopped herbs.
