Background

Here's super-easy and rather tasty side dish that goes particularly well with barbecued, fried or roast pork. It's suitable for an everyday meal or relaxed dinner parties.

Ingredients

100g lentils
100g green beans
1 Tbsp olive oil
juice of half a lemon
1 Tbsp red wine vinegar
¼ tsp unrefined sugar
1 handful parsley, chopped

Instructions

Rinse the lentils then put them into cold water in a saucepan. Bring to the boil and simmer until tender - about 15-20 minutes.
Meanwhile mix the dressing: the lemon juice, oil, vinegar and sugar.
Blanch the green beans in another saucepan - or steam over the cooking lentils
Drain the lentils & green beans then arrange them in a serving dish and toss with the dressing.
Season to taste and sprinkle with the chopped herbs.
