Low-cal kale and mushroom soup
Background
If you're doing the 5:2 Β diet (otherwise called intermittent fasting) you'll treasure this recipe! It's only 32 calories/per portion and you can swap the ingredients if you like (see tips). This low-cal kale and mushroom soup is enough for two people or two portions on a fasting day! If you add some prawnsΒ (they're relatively low-cal too) you'll get an even nicer, filling dish.
Ingredients
- 2 tsp organic bouillon powder (20 kCal)
- 600 ml water (0 kCal)
- 100g button mushrooms (13 kCal)
- 50g curly kale (17 kCal)
- 2 spring onions (40g - 13 kCal)
Instructions
- Add the water & stock powder to a saucepan. Add the mushrooms (rinsed and drained), then bring to the boil. Simmer for 5 minutes.
- Meanwhile finely chop the spring onions and rinse the kale.
- Add the kale to the soup, put the lid on and cook for 5 minutes, or until it's softened.
- Add the spring onion, let it steam for a minute then serve.
Tips
- You can serve it with some 0% noodles if you like. I like to have it with some dried chilli flakes scattered on top.
- You can use the same base for other low-carb veggies - such as courgette, cabbage, green beans, leeks, spinach and so on.
