Maple baked figs with walnuts

Background
These vegan maple baked figs with walnuts make a lovely dessert, served with (plant-based or dairy) vanilla ice cream, custard, yogurt or crème fraîche. Alternatively, you can add it to your morning porridge, pancakes or waffles and the leftover is ideal for yummy trifles and fruit fools.
Ingredients
- 4 figs
- 1 tsp ground cinnamon
- 1 handful walnuts (roughly chopped)
- 3 Tbsp maple syrup
- ½ lemon, juiced
- Mint leaves to garnish
Instructions
- Preheat the oven to 180°C.
- Cut each fig into four wedges.
- Scatter the walnuts in a small baking dish, then lay the figs on top of them.
- Dust with cinnamon then squeeze the lemon juice over them.
- Finally, drizzle with maple syrup and bake for about 15 minutes or until tender and golden.
- Serve warm or at room temperature, garnished with mint leaves.
