Maple baked sprouts and carrots with bacon

Background
You can serve this maple baked sprouts and carrots with bacon as a main dish (with rice or mashed potatoes) or as a side dish in a special menu (for Christmas, Thanksgiving or celebratory Sunday lunch) - it goes particularly well with poultry.
Ingredients
- 4 baby carrots
- 1 red onion
- 1 cup sprouts
- 1 handful olives
- 1 Tbsp olive oil
- 2 slices of smoked bacon, cubed
- 1 clove of garlic, minced
- 1 tsp dried oregano or fresh thyme or rosemary
- 2 Tbsp Maple syrup
Instructions
- Preheat the oven to 180Β°C.
- Cut the red onion into wedges, the sprouts and baby carrots in half.
- Scatter them into a baking dish together with the bacon and minced garlic. Toss well.
- Drizzle with the oil and scatter the herbs over them.
- Bake for about 15 minutes, then add the olives and bake for another couple of minutes, or until the sprouts & carrots are tender and the bacon is golden.
