Background

You can serve this maple baked sprouts and carrots with bacon as a main dish (with rice or mashed potatoes) or as a side dish in a special menu (for Christmas, Thanksgiving or celebratory Sunday lunch) - it goes particularly well with poultry.

Ingredients

4 baby carrots
1 red onion
1 cup sprouts
1 handful olives
1 Tbsp olive oil
2 slices of smoked bacon, cubed
1 clove of garlic, minced
1 tsp dried oregano or fresh thyme or rosemary
2 Tbsp Maple syrup

Instructions

Preheat the oven to 180°C.
Cut the red onion into wedges, the sprouts and baby carrots in half.
Scatter them into a baking dish together with the bacon and minced garlic. Toss well.
Drizzle with the oil and scatter the herbs over them.
Bake for about 15 minutes, then add the olives and bake for another couple of minutes, or until the sprouts & carrots are tender and the bacon is golden.
