Marshmallow and raspberry Chocolate Mousse
Background
I made this marshmallow and raspberry Chocolate Mousse with raspberry flavoured chocolate but you can use normal dark chocolate too, just make sure itβs good quality! Itβs a super easy recipe, and the mousse is perfect for special occasions such as Motherβs day, Anniversaries or Valentineβs day.
Ingredients
- 75g dark chocolate (70% min)
- 75g pink and white marshmallows
- 1 pot double or whipping cream (220 ml)
- 100g raspberries
- 1 Tbsp muscovado sugar
- To garnish: fresh raspberries and chocolate shaving
Instructions
- Break chocolate into small bits, then melt it over simmering water. Add half of the cream then the marshmallows. Stir until smooth, then let it rest.
- Crush the raspberries and sugar with a fork and spoon them into 4 small glasses or bowls.
- Whip the remaining cream until you get soft peaks, then fold it gently into the cooled chocolate mixture.
- Spoon the mousse on top of the crushed fruit then put the glasses in the fridge for about an hour.
- Just before serving, garnish the bowls with fresh raspberries and/or chocolate shavings.
