Background
Masala curry is a vegetarian curry made with potato and carrot in coconut milk. This curry goes very well with rice steamed noodles or roti or steamed rice.
Ingredients
- 1 Large potato (Cubed)
- 1 Large carrot (Diced)
- 1 Onion (Thinly sliced)
- 1 Green chilli
- 1" Ginger (Grated)
- 2 Cloves of garlic (Grated)
- 1 Tbsp Coriander powder
- 1 cup Coconut milk
- 1 Tomato (Chopped)
- ½ tsp Chilli powder
- Salt as required
- 2 tsp Oil
- 1 Sprig of curry leaves
- 1 tsp Turmeric powder
Instructions
- Boil the cubed potato and diced carrot together with little water in a pressure cooker. Keep them aside.
- In a deep bottomed vessel, heat oil and add onion, green chilli, ginger and garlic and fry until brown.
- Add turmeric, coriander powder, chilli powder and tomato and fry until tomato is soft.
- Add the boiled potato and carrot and coconut milk and boil.
- Serve hot.
