Background

Masala curry is a vegetarian curry made with potato and carrot in coconut milk. This curry goes very well with rice steamed noodles or roti or steamed rice.

Ingredients

1 Large potato (Cubed)
1 Large carrot (Diced)
1 Onion (Thinly sliced)
1 Green chilli
1" Ginger (Grated)
2 Cloves of garlic (Grated)
1 Tbsp Coriander powder
1 cup Coconut milk
1 Tomato (Chopped)
½ tsp Chilli powder
Salt as required
2 tsp Oil
1 Sprig of curry leaves
1 tsp Turmeric powder

Instructions

Boil the cubed potato and diced carrot together with little water in a pressure cooker. Keep them aside.
In a deep bottomed vessel, heat oil and add onion, green chilli, ginger and garlic and fry until brown.
Add turmeric, coriander powder, chilli powder and tomato and fry until tomato is soft.
Add the boiled potato and carrot and coconut milk and boil.
Serve hot.
