Masala gravy

Background
Masala gravy is an easy dish to make and is usually served as a side with briyani. This goes well with roti too.
Ingredients
- 4 Tbsp peanuts
- 3 Tbsp sesame seeds
- 1 tsp poppy seeds
- 2 Tbsp dry coconut
- 1 inch ginger
- 2 cloves garlic
- Β½ tsp garam masala
- Β½ tsp turmeric
- 1 tsp chilli powder
- 5 fenugreek seeds
- 2½ cups water
- 5 Tbsp oil
- 1 tsp cumin seeds
- 1 sprig curry leaves
- Β½ medium sized onion (finely chopped)
- Β½ cup tamarind water
- salt to taste
- Β½ tsp jaggery
- 2 Tbsp coriander leaves (finely chopped)
Instructions
- First, dry roast peanuts, sesame seeds, poppy seeds and coconut.
- Transfer to small blender and allow it to cool completely.
- Add ginger and garlic, garam masala, turmeric and chilli powder, fenugreek seeds.
- Add ½ cup water as required and blend to smooth paste. keep aside.
- In a pan, heat oil and add onions, cumin and curry leaves. Saute them.
- Add prepared masala paste, tamarind water, jaggery and salt.
- Mix well and add 2 cups of water.
- Cover and simmer for 30 minutes.
- Add corinander and further simmer for 5 min.
- Serve hot with briyani or roti.
