Background
Potato is one such vegetable which is loved by everyone. This is a simple and easy recipe but serves as a wonderful side dish with steamed rice or plain parantha.
Ingredients
- 500 gms potato
- 1 tsp red chilli powder
- 1 pinch turmeric powder
- 1 big onion finely chopped
- 2 chopped green chillies
- 1 tsp chopped ginger
- Salt to taste
- 1 bunch chopped coriander leaves
- 1 tsp lemon juice
- 2 Tbsp oil
- For seasoning:
- Β½ tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp split black lentils
- 1 sprig curry leaves
Instructions
- Boil potatoes till tender. Peel and mash them coarsely.
- Heat oil in a pan on medium heat and add mustard seeds, cumin seeds, black lentils and curry leaves. SautΓ© for a minute.
- Add chopped onions and fry till brown.
- Add green chillies, chopped ginger mashed potato, and salt.
- Mix well and stir the mixture for 2 minutes.
- Add turmeric, red chilli powder and lemon juice. Mix well.
- Garnish with coriander leaves and serve with plain rice or chapatti.
