Ingredients: 500 gms potato; 1 tsp red chilli powder; 1 pinch turmeric powder; 1 big onion finely chopped; 2 chopped green chillies; 1 tsp chopped ginger; Salt to taste; 1 bunch chopped coriander leaves; 1 tsp lemon juice; 2 Tbsp oil; For seasoning:; ½ tsp mustard seeds; 1 tsp cumin seeds; 1 tsp split black lentils; 1 sprig curry leaves

Background

Potato is one such vegetable which is loved by everyone. This is a simple and easy recipe but serves as a wonderful side dish with steamed rice or plain parantha.

Ingredients

500 gms potato
1 tsp red chilli powder
1 pinch turmeric powder
1 big onion finely chopped
2 chopped green chillies
1 tsp chopped ginger
Salt to taste
1 bunch chopped coriander leaves
1 tsp lemon juice
2 Tbsp oil
For seasoning:
½ tsp mustard seeds
1 tsp cumin seeds
1 tsp split black lentils
1 sprig curry leaves

Instructions

Boil potatoes till tender. Peel and mash them coarsely.
Heat oil in a pan on medium heat and add mustard seeds, cumin seeds, black lentils and curry leaves. Sauté for a minute.
Add chopped onions and fry till brown.
Add green chillies, chopped ginger mashed potato, and salt.
Mix well and stir the mixture for 2 minutes.
Add turmeric, red chilli powder and lemon juice. Mix well.
Garnish with coriander leaves and serve with plain rice or chapatti.
