Background
These delicate Matcha waffles are ideal for special breakfasts, brunches for example on Mother’s day, birthdays, anniversaries etc. I made them using gluten-free blended flour and dairy-free milk but do use normal wheat flour and milk if you like. I didn’t add any sugar to the batter, as the waffles tend to stick to the maker and I was going to serve them with a sweet syrup anyway - but if you like your waffle sweet, you can add 2-3 Tbsp sugar to the batter. Serve the waffles with your favourite sauce and topping - this can be chocolate sauce, ice cream, custard, whipped cream, jam, fruit compote, maple syrup etc.
Ingredients
- 1 cup self-raising (gluten-free) flour
- 1 tsp baking powder
- 2 tsp matcha powder
- 2 eggs
- 1 cup almond/oat milk
- Zest and juice of 1 lemon
- 1 Tbsp oil
- Sugar to taste (optional)
Instructions
- Whisk the ingredients together in a large mixing bowl and rest for 10 minutes. (You can use electric or hand-held whisk)
- Heat your waffle maker. Once it’s hot, spoon in some batter and seal, following the machine’s instructions. The cooking should take 3-5 minutes per waffle, depending on your waffle maker. The waffle should be golden - crispy on the outside, soft inside.
- Transfer the waffle to a plate, then make 2-3 more waffles (depending on the size/type of your waffle maker).
- Serve them with chocolate sauce, ice cream, whipped cream, jam, fruit compote, maple syrup etc.. whatever you fancy! Enjoy!
