Background

If you don’t have time to bake mince pies, or your oven doesn’t work or is in use – just take out your waffle iron to make mince pie croffles. It’s so easy, crunchy and yummy. You can make big ones or small ones, using Christmas cutters – such as heart, moon, snowman, bell, Xmas tree etc. I like having this mince pie croffle with my morning coffee on Christmas Day and Boxing Day, but you can serve it with a mug of hot chocolate or mulled wine in the evening too!

The Recipe

Ingredients

1 ready rolled puff pastry
1 jar mincemeat
Icing sugar

Instructions

1. Cut two identical star shapes from the puff pastry – make sure they fit in the waffle maker, allowing for the pastry to expand.
2. Spread mincemeat on one star, then put the other one on top, squeezing the two pastry pieces together with your fingers.
3. Heat he waffle maker, then place the stuffed star in the middle.
4. Put the lid on and cook for 3-5 minutes until the outside is golden brown. If you want it more crispy, cook it a bit longer.
5. Transfer it to a plate, dust it with icing sugar and serve warm.
6. Reroll the remaining pastry and make more mince pie croffles.
7. Depending on your waffle maker you could make 2 or 4 croffles at ones - cut the pastry to fit in the iron plates.
8. Dust them with icing sugar then serve.
