Mini chocolate and cherry muffins
Background
These mini chocolate and cherry muffins are perfect for parties and special occasions - use brandy or other alcohol-soaked cherries for adult parties!Β You can make your own chocolate milk by mixing good-quality cocoa powder and/or dark chocolate with hot milk, then let it cool. Use this method too if you need the muffins to be dairy-free (almond milk or oaty milk are the best alternatives).Β Serve the muffins at afternoon-tea parties, picnics, celebrations and so on.
Ingredients
- 2 cups self-raising flour
- 2 eggs, beaten
- 1 Tbsp cocoa powder
- ½ tsp baking soda (bicarbonate of soda)
- 1 cup chocolate milk
- ½ cup melted butter or margarine
- ½ cup unrefined cane sugar
- Cherries in syrup or in brandy (drained and pitted)
Instructions
- Preheat the oven to 180Β°C.
- Sift the flour, cocoa and baking soda in a large bowl then mix in the sugar.
- Mix the chocolate milk with the eggs and butter, then add to the flour mixture and stir gently until you get a lump-free batter.
- Put some paper cases into two mini muffin tins and spoon the batter in the cases two-thirds full. Press one cherry into each muffin.
- Bake for 15-20 minutes, then transfer the muffins to a wire rack to cool.
Tips
You might need to add more sugar to the batter if you're using your own chocolate milk. The shop-bought versions already have lots of sugar in them!Categories
