Background
This miso chicken soup is healthy, hearty soup, perfect for boosting your immune system. Just before serving, you can add some sesame seeds or fresh herbs.
Ingredients
- 1 chicken breast or 2 chicken thigh fillets
- 1 onion or Β½ leek
- 1 clove of garlic
- 2 cm piece of ginger ( optional)
- 2 carrots
- 1 cup French beans
- 4 -5 broccoli rosettes
- 1 cup of green peas
- 7500 ml chicken stock ( preferably organic)
- 1 Tbsp miso
- 1 tsp apple cider vinegar
Instructions
- Cut the leek or onion into thin slices, the carrot into small cubes. Peel the garlic and the ginger and cut them in half.
- Cut the chicken into thin strips.
- Put the chopped veggies, garlic and ginger in a pot. Add the stock and bring to the boil. Add the chicken pieces and broccoli and cook for 5-8 minutes. Add the peas and cook for another 5 minutes. Make sure the chicken has cooked through. The veggies should be tender.
- Turn off the heat and mix in the miso and the apple cider vinegar.
- Serve warm.
