Miso soup with soya beans & shiitake

Background
This miso soup with soya beans & Shiitake is super healthy and easy to make. It’s quite filling too if you serve it with wholesome noodles (I used black been noodles).
Ingredients
- 500 ml vegetable stock
- 50g Shiitake mushrooms
- 100g soya beans
- 1 tsp miso paste
- 1 tsp dried wakame
- Lemon juice
Instructions
- Heat the stock in a saucepan, add the shiitake and beans, then cook for 8-10 minutes. Add the wakame to the soup for the last 2 minutes of the cooking.
- Mix the miso paste in a small bowl with a ladleful of the soup until you get a smooth paste, then add this to the soup. Turn off the heat.
- Serve the soup immediately - with precooked noodles, if you like.
