Background
This monster omelette is a scary treat for Halloween breakfast or brunch. Itβs very easy to make and you can add other feeling if preferred (salami, ham, sausage or roasted veggies etc). Serve it with a crispy or "terrifying" salad and wholesome pumpkin bread.
Ingredients
- 3 eggs
- 1 Tbsp milk
- 1 Tbsp olive oil
- 4 slices cut from a goatβs cheese log with a rind
- 1 roasted red pepper
- 1 small tomato or sundried tomato
- 2 green olives, chopped
- salt and pepper to taste
- 4 basil leaves
- Chili sauce or ketchup
Instructions
- Whisk together the eggs and the milk. Season with a couple of pinches of salt.
- Remove the skin of the roasted pepper, then cut the flesh into long strings.
- Finely chop the tomato.
- Heat the oil in a frying pan, then add the egg mixture, letting it spread out evenly.
- Put two slices of the goats cheese on one side of the omelette, then add a few red pepper strips. Scatter some chopped tomatoes on top. Cook until the omelette has set, then add the basil leaves.
- Carefully fold the omelette in half and cook until itβs done.
- Transfer the omelette to a large plate. Put the remaining cheese slices on the top, wrapped with roasted pepper strips to create two large eyes. Add the chopped olives for pupils.
- Add a couple of red pepper pieces as teeth then dot the plate with chilli sauce or ketchup.
