Moroccan steak salad

Background
If you want to spicy up your steak, do try this Moroccan steak salad recipe! It’s super easy to make, ideal for BBQs in the summer or for a quick and easy lunch/supper during the rest of the year. Serve it with flatbread or potato-salad.
Ingredients
- 2 matured sirloin steaks
- 2 tsp paprika
- 2 tsp ground cumin
- Olive oil spray
- 50g feta cheese
- ½ can chickpeas (200g)
- 1 lemon
- 1 large ripe tomato
- 1 Tbsp mint leaves
Instructions
- Pat-dry the steaks. Mix the paprika and cumin, then rub the steak with it. Rest for 15 minutes.
- Turn on the grill, griddle pan or BBQ.
- Season the steak with salt and pepper then spray with the oil.
- Cook on each side for about 5 minutes (depending on the thickness of the steak and how well done you like it). Let it rest.
- Rinse & drain the chickpeas. Cut the tomatoes into rings, cut half of the lemon rind into thin strips.
- Divide the chickpeas between two plates, add the tomato slices, then crumble the feta, scatter the lemon peel & mint leaves on top. Squeeze the juice of the lemon all over. Season to taste.
- Slice the steak into thin strips and place these on top the salad.
- Serve warm.
