Background
Murukku is a savory and crunchy Indian snack made with a combination of rice flour and split black lentil flour. A specially designed mould is used to make it. There are many varieties of Murukku, the one which I am sharing is a basic recipe.
Ingredients
- 1 cup rice flour
- 2 Tbsp split black lentil flour
- 1 Tbsp hot oil
- 1 tsp sesame seeds
- Β½ tsp carom seeds
- Salt to taste
- Oil for deep frying
Instructions
- Dry roast black lentils on a medium flame until light brown.
- Cool and make fine powder.
- Add the flours, carom seeds, sesame seeds, and salt to a bowl and mix well.
- Add hot oil and mix well.
- Add water just enough to make smooth dough.
- Heat oil in a deep pan.
- Grease the murukku mould and fill the mould with dough.
- Press the mould to make spirals on a butter paper and when the oil is hot enough, remove the spiral and drop gently in the hot oil.
- Fry till golden brown. Drain them on a kitchen tissue to remove excess oil.
- Store the murukku in air tight jar and serve them as evening snack along with a hot cup of tea.
