Mutton fry
Background
This is a lip smacking delicious lamb preparation with a palatable flavor of spices. I am sure all meat lovers would love this recipe. My husband is a foodie and he loves non-vegetarian dishes. Perhaps this has encouraged me to try different varieties of non-vegetarian preparations from different regions of India. Mutton fry is one of his favorite dishes and mine too.
Ingredients
- 500g Boneless mutton pieces
- 2 Tbsp Ginger garlic paste
- 2 Medium size onions chopped
- Β½ cup Mint leaves chopped
- 1 sprig of Curry leaves
- Salt to taste
- Coriander leaves for garnish
- For spice powder:
- 6-8 Dry red chillies
- 2β Cinnamon stick
- 5 Cloves
- 3 Cardamoms
- 2 tsp Coriander seeds
- 1 tsp Cumin seeds
- 1 tsp Pepper corn
- 2 Star anise
Instructions
- Cut and clean the mutton pieces thoroughly.
- Cook the mutton in a pressure cooker till soft. Allow the cooker to cool down a bit, remove the lid and transfer the mutton to a thick bottomed vessel. Cook till all the water evaporates. Keep aside.
- Add oil in a pan. Add onions and fry till brown.
- Add ginger garlic paste to the onions, fry for a minute.
- Let it fried onions cool and blend them to a paste. Keep aside.
- Fry all the spices in a pan till they become aromatic. Put them in a blender and make fine powder. Set it aside.
- Heat oil in a skillet. Add curry leaves and mutton pieces. Fry for 5 minutes.
- Add onion paste, spices powder, mint leaves, salt and mix well.
- Cook till the oil oozes out. Transfer to serving bowl and garnish with coriander leaves. Serve hot with steamed rice.
