New potatoes with green beans and goats cheese

Background
This new potato salad with green beans and goats' cheese is a really nice side dish when you have a BBQ or a summer party. It's also an excellent vegetarian meal for a quick lunch or supper. Β You can serve it warm or cold.
Ingredients
- 500g new potatoes
- 100g green beans (fine)
- Half red onion
- 4 spring onions
- 1 tsp chopped tarragon
- 50g soft goats' cheese
- Dressing:
- Β½ tsp Dijon mustard
- 100ml crème fraiche (or sour cream, Greek yogurt )
- 3 Tbsp mayonnaise
- Β½ tsp red wine vinegar
Instructions
- Rub and wash the potatoes thoroughly, then cook until tender in lightly salted water. This will take 10-15 minutes, depending on their size.
- Slice the beans into three equal pieces, then add them to the potatoes for the last 3-4 minutes of the cooking.
- Meanwhile mix the dressing sauce and season with salt and pepper. Slice the onions and chop the tarragon.
- Drain the potatoes and green beans and put them into a serving dish. Add the onion and tarragon, then pour over the dressing.
- Crumble the goat's cheese on top.
- Serve it warm or cold.
