Nutty chocolate rocks

Background
These nutty chocolate rocks are lovely, healthy snacks during the festive season. I made them with walnut, but hazelnut, pecan and almond would work too. If you use dairy-free butter and top quality chocolate - then youβll get a vegan, glute-free and rather healthy nibbles.
Ingredients
- 1 bar of good quality, dark chocolate (about 200g)
- 1 cup walnut
- 1.5 Tbsp butter or milk-free margarine
- 3 Tbsp desiccated coconut (sugar-free)
- Icing sugar (to serve), optional
Instructions
- Chop the nuts into small pieces and mix with the coconut.
- Melt the chocolate in bowl resting on top of a pan of simmering. Mix in the butter or margarin. Stir until the butter is completely melted.
- Take the bowl off the pan. Add the walnut-coconut mixture to the melted chocolate and mix well.
- Refrigerate for 10 minutes.
- When itβs slightly hardened, drop spoonfuls of the mixture onto a sheet or plate lined with baking paper. Chill until they firm up.
- Dust them with some icing sugar just before serving.
