Oat and almond cookies with sour cherries

Background
These vegan oat and almond cookies with sour cherries are perfect with your breakfast coffee or for snacking during the day. They have no added sugar, no flour, no eggs, no dairy β yet sweetΒ and moist enough. You can use gluten-free oats for this recipe, if needed.
Ingredients
- 2 ripe bananas
- 1 cup oats (gluten-free if needed)
- 3 Tbsp ground almond
- 1 tsp ground cinnamon (optional)
- 1 tsp vanilla essence
- 1 Tbsp vegetable oil (optional)
- 3 Tbsp dried sour cherries
Instructions
- Mash the bananas with a fork or blend them in a blender.
- Add the oats, ground almond, cinnamon, vanilla and sour cherries, then mix well.
- Let the mixture rest for a few minutes. Meanwhile, preheat the oven to 180Β°C and line a baking tray with parchment paper.
- If the batter becomes too thick, add some apple juice or plant-based milk. It should be thick but malleable.
- Using your hands, make equal sized balls, then press them between your palms. Place them on the prepared baking tray.
- Bake in the oven for approx. 15-20 minutes until golden.
- Let them cool on a wire-rack and serve.
