Oat and banana slice
Background
These oat & banana slices are dairy-free, gluten-free, egg-free and sugar-free. They are filling, warming and healthy, and super-easy to make! Ideal for breakfast, picnics, snacking, before exercising etc.Β I normally add a handful of raisins or other dries fruits (cranberries, cherries, peaches etc) just before transferring the mixture into the baking tin. Sometimes I use other fruits, such as peaches, pears or apricots. At Christmas time instead of coconut I grate the skin of one orange and add instead of cinnamon I use gingerbread spice mix.
Ingredients
- 4 tbs sunflower oil
- 2 ripe bananas
- 1 tsp cinnamon
- Β½ tsp vanilla essence
- 50g nuts (cashew, walnuts, almonds etc)
- 50g rolled oats
- 50g desiccated coconut
- 1 apple, peeled and coarsely grated
Instructions
- In a food processor, blend the bananas, oil, vanilla essence and ground cinnamon.
- Add the nuts (cashew, walnuts, almonds etc), blend for a few seconds then add the desiccated coconut, oats and the grated apple.
- Blend for a few seconds and turn it into a greased and lined baking tin (about 20/23cm) and bake for 25 minute at 190Β°C.
- Leave it to cool then cut it up.
Tips
If you're on a gluten-free diet or you have celiac disease make sure the label specifically says it's gluten-free!Categories
