Oat and fig banana cookies

Background
Oat and banana cookies are super healthy as they don’t need added sugar, have no flour, eggs or dairy. These oat and fig banana cookies are gluten-free too and the pistachios or almonds provide extra (healthy) oil for softness. They are perfect for breakfast, afternoon tea or snacking during the day.
Ingredients
- 2 ripe bananas
- 1 cup oats (gluten-free if needed)
- 3 Tbsp ground or chopped pistachios or almonds
- 1 tsp ground cinnamon (optional)
- 1 Tbsp maple syrup or honey (optional)
- 1 Tbsp vegetable oil (coconut or melted almond butter)
- 4 fresh figs, chopped
Instructions
- Mash the bananas with a fork or blend them in a blender.
- Add the oats, ground pistachios or almond and the cinnamon, if used, then mix well.
- Chop the figs into small pieces, then fold them into the mixture.
- Let the batter rest for a few minutes.
- Meanwhile, preheat the oven to 180°C and line a baking tray with parchment paper.
- If the batter seems too thick, add some plant-based milk. It should be soft but malleable.
- Using your hands, make equal sized balls, then press them between your palms. Place them on the baking tray.
- Bake in the oven for approx. 20 minutes until golden.
- Let them cool on a wire-rack and serve.
