Background
Oat and banana cookies are super healthy as they donβt need added sugar, have no flour, eggs or dairy. These oat and fig banana cookies are gluten-free too and the pistachios or almonds provide extra (healthy) oil for softness. They are perfect for breakfast, afternoon tea or snacking during the day.
Ingredients
- 2 ripe bananas
- 1 cup oats (gluten-free if needed)
- 3 Tbsp ground or chopped pistachios or almonds
- 1 tsp ground cinnamon (optional)
- 1 Tbsp maple syrup or honey (optional)
- 1 Tbsp vegetable oil (coconut or melted almond butter)
- 4 fresh figs, chopped
Instructions
- Mash the bananas with a fork or blend them in a blender.
- Add the oats, ground pistachios or almond and the cinnamon, if used, then mix well.
- Chop the figs into small pieces, then fold them into the mixture.
- Let the batter rest for a few minutes.
- Meanwhile, preheat the oven to 180Β°C and line a baking tray with parchment paper.
- If the batter seems too thick, add some plant-based milk. It should be soft but malleable.
- Using your hands, make equal sized balls, then press them between your palms. Place them on the baking tray.
- Bake in the oven for approx. 20 minutes until golden.
- Let them cool on a wire-rack and serve.
