Oat and walnut cookies with fig

Background
Late Summer and early Autumn the market is full of fresh, ripe figs which can be used for many yummy recipes. These oat and walnut cookies with fig is vegan, healthy and low-sugar, so perfect for the health conscious and those on various diets. Use gluten-free oats, if required!
Ingredients
- 2 bananas
- 1 cup oat
- 1 tsp cinnamon
- 1 apple, grated
- Β½ cup chopped walnuts
- 2 figs
- Honey or agave syrup
Instructions
- Mash the bananas with a fork, then add the oats, cinnamon, walnuts and apple. You can add some agave syrup too, but not too much!.
- Mix well and rest.
- Set the oven temperature to 170Β°C. Line a baking sheet with parchment paper.
- Cut the figs into thin slices.
- Make balls from the dough and put them on the baking sheet, then press them down to form circular cookies. Using the agave syrup, glue one slice of fig on top of each cookie, then brush them with the remaining syrup.
- Bake for about 20 minutes until the cookies are golden.
- Let them cool, then serve (you can brush them again with some syrup, if liked).
