Oatmeal bar with jam
Background
If you like flapjacks or oat bars, why don’t you bake some yourself? They really super easy to make and, most importantly, you can control their sugar and fat content. These vegan oatmeal bars with jam are quite healthy, particularly if you make them with low-sugar jam. I used my home-made raspberry jam, but strawberry, cherry, blueberry, blackberry jams would work well too. They are perfect for breakfast, kids parties, picnics, afternoon tea-parties or as snacks during the day.
Ingredients
- 2 cups of wholemeal flour
- 1 and a half cups jumbo oats
- 1 cup muscovado sugar
- ½ tsp salt
- 2 tsp ground cinnamon
- 1 cup diced dairy-free spread (or soft butter)
- Approx. ½ cup of jam
Instructions
- Preheat the oven to 160 C degrees. Grease and line an approx. 22x22cm baking tray.
- Mix the flour, oats, sugar, salt and cinnamon, then rub the butter in using your fingers until you get a coarse crumble.
- Tip half of the mixture into the prepared tin, then spread it out evenly, pressing down slightly with the base of the spoon.
- Spread some jam on top evenly - as thickly as you like - then add the remaining oat mixture. Again, spread it out evenly, while lightly pressing down.
- Bake the cake for about 45 minutes until golden brown. Let it cool in the tin, then move it to a wire rack.
- When completely cooled, slice it into squares or bars.
