Okra fry (bhindi fry)

Background
Okra fry is one of the easiest dish to make. It goes well with either roti or rice.
Ingredients
- 500 gms okra chopped
- Oil for deep fry
- Β½ cup peanuts
- Handful of curry leaves
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chilli powder
- Salt to taste
Instructions
- Wash and cut the okra into round and thin pieces. Keep aside.
- Heat oil in a deep bottomed pan and fry the okra in batches on medium flame till they turn crispy. They should not be over fried and should retain the green color.
- Transfer them to a bowl.
- Fry peanuts and curry leaves in the same oil and transfer them to the same bowl.
- Add salt, coriander powder, cumin powder and red chilli powder. Mix well.
- Serve hot with either roti or rice.
