Okra with coconut

Background
Okra (Lady's finger) is a favourite vegetable in our family. There are many ways to cook okra but this recipe gives a very good flavour to okra combined with coconut. Not everybody is a fan of okra as it is a sticky vegetable but this can be avoided just by cleaning the vegetable with water and towel dry it a night before. This recipe serves as a side dish and goes well with rice or roti.
Ingredients
- 500g Okra (Lady's finger)
- 1 cup grated coconut
- 2 Green chillies
- 2 Cloves of garlic
- Salt as required
- 1 Tbsp oil
- 1 tsp Cumin seeds
- 1 sprig Coriander leaves chopped
Instructions
- Chop the okra into small pieces.
- Heat oil in a pan. Add the chopped okra and fry until cooked.
- Meanwhile, grind the grated coconut, cumin seeds, green chillies and garlic together.
- Add the above ground mixture and salt to the cooked okra and stir for a minute or two until the raw smell is gone.
- Garnish with coriander leaves.
