Background

Okra (Lady's finger) is a favourite vegetable in our family. There are many ways to cook okra but this recipe gives a very good flavour to okra combined with coconut. Not everybody is a fan of okra as it is a sticky vegetable but this can be avoided just by cleaning the vegetable with water and towel dry it a night before. This recipe serves as a side dish and goes well with rice or roti.

Ingredients

500g Okra (Lady's finger)
1 cup grated coconut
2 Green chillies
2 Cloves of garlic
Salt as required
1 Tbsp oil
1 tsp Cumin seeds
1 sprig Coriander leaves chopped

Instructions

Chop the okra into small pieces.
Heat oil in a pan. Add the chopped okra and fry until cooked.
Meanwhile, grind the grated coconut, cumin seeds, green chillies and garlic together.
Add the above ground mixture and salt to the cooked okra and stir for a minute or two until the raw smell is gone.
Garnish with coriander leaves.
