Orange and almond oat cookies

Background
Being on a healthy diet doesn’t mean that you can’t have yummy treats. These orange and almond oat cookies are vegan, gluten-free and are low sugar yet absolutely delicious. Perfect for breakfast, afternoon tea or as snacks during the day.
Ingredients
- 1 cup oats (gluten-free)
- ½ cup almond meal
- 2 Tbsp soft dairy -free spread (or butter)
- Grated zest and juice of 1 orange
- 25g vanilla sugar
- 2 tsp Stevia
Instructions
- Blitz the oats until you get breadcrumbs. Add the almond meal, and the spread/butter and whiz until you get a breadcrumbs-like mixture.
- Transfer the mixture to a bowl. Add the sugar, orange zest and juice, combine.
- Shape the mixture into a ball, cover and rest in the fridge for minimum 30 minutes.
- Preheat the oven to 180°C.
- Make 10-12 small ball of the dough. Flatten these between your palms into 3mm thick patties. Put these on a lined baking tray and bake for approx. 20-25 minutes until golden.
- Let the cookies cool and transfer them to a plate.
